Peach Cream Cheese Pie

I have never tasted a Peach Pie as good as this!!!  You just might moan or sigh with pleasure.  I did.
A family recipe from my daughter's in-laws commonly known as Peach Kolob pie.  It's heavenly.


* 9-inch crumb crust


1 - 8 oz pkg cream cheese, softened
1 Eagle Brand sweetened condensed milk
1/2 c lemon juice
1 tsp vanilla

In bowl beat soft cream cheese until light and fluffy.  Gradually stir in sweetened condensed milk until thoroughly blended.  Stir in lemon juice and vanilla.  Turn into crust and refrigerate 2-3 hours.

5 large fresh peaches
2 Tb corn starch
1/2 c sugar
1/2 c water

Cut 4 peaches in slices, arrange atop pie.  Mash remaining peaches in small saucepan.  Combine sugar and cornstarch.  Add mashed peaches and water.  Cook over medium heat stirring constantly until thick and clear.  Strain.  Add few drops of yellow food coloring (for extra WOW factor).  Cool.  Pour glaze over top of chilled pie.


2 cups graham cracker crumbs
1/2 c melted butter
1/3 c sugar

Combine all ingredients; press over bottom and up sides of 9-inch pi plate.  Bake at 400 for 10 minutes.
