Blueberry Lemon Cream Cheese Cookies

These cookies should really be called Abracadabra cookies . . . because they magically disappear!  A perfect blend of a cookie and a muffin bursting with flavors of blueberry and a hint of lemon.  Did you notice they have cream cheese, too?  A Pinterest win and new favorite for us!

Mr B and I were traveling back into town late on a Saturday night, and I needed a dessert for a family dinner.  It's a great thing when your married children have bigger homes, kitchens, and back yards than you do.  We alternate between homes for a Sunday dinner once a month.  My assignment this time was a dessert, but didn't know that before leaving town.

Since I don't shop on Sundays, I looked high and low in our house and on Pinterest for enough ingredients to make anything!  I was starting to sweat until I found this sweet thing.  I had blueberries and cream cheese.  Yes!


PRINTABLE RECIPE

What you need:

1 cup sugar
1/2 c butter, softened
4 oz cream cheese
1 egg
1 tsp vanilla
2 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 1/2 - 2 cups blueberries (the smaller size are better)

Lemon Glaze:
1 1/2 cup powdered sugar
1 Tb lemon juice
1 Tb milk
1 tsp vanilla
zest of one lemon

What you do:

  1. Preheat oven to 350 degrees.  Line a cookie sheet with parchment paper or lightly spray with cooking spray.
  2. In a large bowl cream together the sugar, butter, and cream cheese until smooth.  Add in egg and vanilla and beat until blended.
  3. In another medium bowl combine flour, baking soda, baking powder, and salt.  Beat the dry ingredients into the wet ingredients until blended.  This is a stiffer dough - Gently fold in blueberries - you don't want the blueberries breaking too much.
  4. Drop heaping tablespoons of dough onto the cookie sheet.  Bake for 10-12 minutes.  Let cool on a wire rack.
  5. Whisk together the lemon glaze ingredients.  Drizzle on top of the cooled cookies.
Enjoy!  But hurry . . . they disappear quickly.
