Best German Chocolate Frosting

When Brooke was telling me about her German Chocolate cake drop, I said, "Do you make your frosting because I have the best recipe EVER!"  For real.  Simple too.

This sinful delight was from Mr B's mother, and it's been a birthday request time and again for nearly 30 years now.  Well, we just happen to be having a birthday dinner tonight!  The one time calories don't count, right?

It's easy because you bake your favorite brand of German Chocolate cake mix and then top with this scrumptious frosting.  I grew up with Betty Crocker and my mother's name is Betty . . . so I'm a little partial.

Here's what you need:

1 cup evaporated milk
1 cup sugar
3 egg yolks
1/2 cup butter
1 tsp vanilla

1 1/3 angel flake coconut
1 cup chopped pecans

Cook and stir on medium heat until thickened - about 12 minutes.  Just a gentle bubbling - not a full boil.  Add coconut and chopped pecans and beat until thick.  Mr B's mother would stir it (beat) with a wooden spoon until it was thick.  I don't have that kind of patience, so I stir it for a bit, put it in the fridge for a bit, stir it for a bit again until it is the consistency I want for spreading.

The hard part is not eating the frosting first!

Brooke makes her cakes pretty with layers.  Either way - it's all good . . . with a glass of milk.
