Baked Eggplant Parmesan

After . . . 

Our garden has now reached the point of needing to share with the neighbors.  Aren't these eggplants the most beautiful sight?  We gave the big ones away and kept 3 small ones which was perfect for us.  I guess you can tell what we are having for dinner.  

Before . . .

Fried eggplant takes a little more prep so you don't end up with soggy slices.  I decided to search for a baked eggplant recipe.  And where do I go?  Pinterest, of course.  Bingo!  I found a really good and super simple recipe @ theseasonedmom.  It passed Mr. B's taste test, so it's a keeper.

What you need:
  • 3 TB melted butter
  • 1/2 cup corn flakes
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt
  • dash of pepper
  • 1 small eggplant
  • 1 egg, beaten
  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese

What to do:
  • Preheat oven to 400 degrees.
  • Pour melted butter into a 7x11 baking dish.
  • Place egg in a shallow dish
  • In a separate shallow dish, combine corn flakes crumbs, Parmesan cheese, salt and pepper.
  • Peel eggplant and cut into 3/4-inch slices.  Dip each slice in egg and then the crumb mixture.
  • Place in the baking dish.
  • Bake for 20 minutes, turn slices and bake an additional 15 minutes.
  • Pour marinara sauce over eggplant and top with mozzarella cheese.  Bake for 3 more minutes, or until cheese is just melted.

Serve with your favorite pasta.
