Lemon Crinkles [4 ingredients]

Do you ever have times when you want to make cookies and wish you had all the ingredients at a moments notice?  Maybe some new neighbors moved in or you barely remembered someone's birthday and didn't want to look lame by forgetting it.

Here's a recipe with 4 ingredients you can always have on hand.  You're welcome.  I can't believe I haven't heard of them before - have you?  There are a variety of sources on Pinterest, but I chose to share one from Betty Crocker.  I grew up with this brand and it lovingly makes me think of my mother, Betty.  By the way, she's having her 95th birthday this week!

It's a very soft dough and actually fun to work with.  We made these on our Grandkiddos sleepover and took them to neighbors when we went caroling.


Yield:  2 dozen (tablespoon size)


1 box Betty Crocker SuperMoist Lemon cake mix
1 container (8 oz) cool whip, thawed
1 egg
1/2 cup powdered sugar
(optional:  1 drop doTERRA Lemon essential oil)


Heat oven to 350.  Spray cookie sheet with cooking oil - or I like to use parchment sheets.
In medium bowl stir together cake mix, whipped topping and egg until combined.

Place powdered sugar in small bowl.  Using wet hands, shape tablespoonfuls of dough into balls; roll in powdered sugar.  On cookie sheet, place balls 2 inches apart.

Bake 10-12 minutes or until edges are set.  Cool 2 minutes, remove from cookie sheet to cooling rack.

Note:  Use other cake mix flavors to change up the recipe.
