Mississippi Mud Cake

Made this picture super big, so you could see all that goodness.

I did offer to make a cake or banana pudding for the birthday boy - his choice.  He chose Mississippi Mud Cake.  I was kind of hoping that would be his choice, because I was wanting some of that goodness myself.  And it also gives me a chance to share that recipe with you all.  Now you know me pretty well, so trust me when I say it is really easy and anyone can make this.


Whisk together:
    1 cup butter, melted
    2 cups sugar
    1/2 cup unsweetened cocoa
    1/8 teaspoon salt
    4 large eggs, slightly beaten
    1 teaspoon vanilla
Stir in:
    1 1/2 cups all purpose flour
    1 1/2 cups chopped pecans

Pour batter into a greased 15x10 jelly roll pan.  Bake at 350 degrees for 20-25 minutes, or until wooden pick inserted in center comes out clean.  Remove from oven.  Top warm cake evenly with one (10.5 ounce) bag mini marshmallows.  Return to oven and bake five minutes.  Drizzle chocolate frosting over warm cake.  Cool completely.


1 (16 ounce) package powdered sugar, sifted
1/2 cup milk
1/4 cup butter, softened
1/3 cup cocoa

Beat all ingredients together at medium speed until smooth.  After it cools completely, call me and we can sit down and enjoy it together.


  1. That sure is a tiny little candle. Looks devilish delicious!

  2. My Mr. B said if we used all the candles needed for the birthday boy it would be a fire hazard.
