Spinach Corn Casserole

Not sure where I got this recipe.  I think maybe from a friend and it may be a Paula Dean recipe because it does have butter in it.  All I know is it is delicious and would look very festive on a holiday table.  It won't be on my holiday table because I just made it for a dinner we had with some of our good friends.  But I wanted to share it with you all, just in case you were looking for that last thing for dinner.

1 - 16 ounce bag frozen niblet corn - thawed
1 - 10 ounce bag fresh baby spinach
3 carrots - grated
1 onion - finely chopped
1 - 16 ounce container sour cream
1 can Cream of Chicken soup
1 large egg
1/2 cup butter - melted
1 - 6 ounce box chicken flavored stuffing mix

Preheat oven to 350 degrees. Lightly grease a 13x9 inch baking dish.

In a large bowl combine the corn, spinach, carrots and onion.  In a smaller bowl combine sour cream, soup and egg.  Add the soup mixture to the corn mixture, stirring to combine.  In a medium bowl combine stuffing mix and butter.  Spoon half of stuffing mixture to corn mixture, stirring to combine. 

Spoon mixture into baking dish.  Sprinkle remaining stuffing mixture over casserole.  Bake one hour.

I can't believe I didn't take a picture of it in the casserole dish.  I always use a nice white casserole dish and this casserole just looks lovely in it.  I would take a picture now, but it is all gone, eaten by those lovely friends that came over last night.

I'm going to tell you that I can't always find a 16 ounce bag of frozen corn, so I may settle for a 12 ounce bag.  You just have to go with the flow.  Everyone that tastes this wants the recipe - so because you are some of my favorite people, I'm sharing it with you now.  If you really want a taste, give me a little notice when you will be stopping by and I'll whip it up for you.
