Simply Sinful Cherry Chocolate Cake

My grandmother would have loved this cake!  She had been known to re-frost a cake 2-3 times because the frosting was too hard to resist.  It's a chocolate lover's temptation with a glaze frosting that tastes just like fudge!

1 pkg Devil's food cake mix
1 can (21 oz) cherry pie filling
2 large eggs
1 tsp pure almond extract

1 C sugar
5 T margarine  (I always use butter)
1/3 C milk
6 oz semi-sweet chocolate chips
(6 oz = 1 heaping cup of chocolate chips)

Heat oven to 350 degrees . . . lightly oil 9 x 13 pan.

Place all ingredients in large mixing bowl and beat with a mixer on low for one minute, scrape sides of bowl with spatula.

Increase to medium speed for 2 minutes.  Batter should look thick and well blended.  Pour into pan, smoothing the top with spatula.  Bake 30-35 minutes.  Or until toothpick comes out clean.

In small saucepan, combine sugar, margarine and milk.  Bring to boil, stirring constantly.  Cook 1 minute.  Remove from heat, stir in chocolate chips until melted and smooth.  Spread over cooled cake.

Note:  The frosting is like a sheet cake glaze at first, but will thicken up as it sets.  Don't worry.  It's all good.
