Italian Cheese Tortellini [crockpot]

May 25, 2017

There's a reason they call it comfort food.  It fills you up and sticks to your ribs.  If you like cheese, Italian food, cheese pasta, lasagne, sausage, and cheese . . . you will love this recipe.

(can be doubled for a large crockpot)

1/2 lb ground beef
1/2 pound sweet Italian sausage, casings removed
1 (16 oz) jar marinara sauce
1 4.5 oz) can sliced mushrooms
1 (14.5 oz) can Italian-style diced tomatoes, undrained
1 (9 oz) pkg refrigerated or fresh cheese tortellini
1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese

Crumble the ground beef and sausage into a large skillet. Cook over medium-high heat until browned.  Drain. Combine the ground meats, marinara sauce, mushrooms, and tomatoes in a slow cooker.

Cover, and cook on LOW heat for 7-8 hours . . . Stir in the tortellini, and sprinkle the cheeses over the top. Cover and cook for 15 minutes more on LOW, or until tortellini is tender.  Serves 6.

Thanks for coming to dinner!  I enjoy good company.
