Lemon Bundt Cake

A couple of months ago we had a potluck at church.  I decided to have only ONE dessert - so that meant I shouldn't get anything chocolate because I can't eat just one piece of chocolate.  So I chose a slice of bundt cake.  It was store-bought, but let me tell you, it just perked up my taste buds and was delicious.  All I knew was it had a lemon taste.

So as soon as I got home, my computer was burning up as I looked in Pinterest and everywhere else for a lemon bundt cake.  I tried three different ones, and this is the winner.  Honestly, I can't remember where I found it, but it became my favorite summer time cake.

Here is what you need:


1 box Lemon cake mix
1 small (3.9 ounces) Instant Vanilla Pudding
1/2 cup sour cream
3/4 cup oil
3/4 cup water
1/2 cup sugar
4 eggs
1 Tablespoon lemon zest
3 Tablespoons lemon juice

Preheat oven to 350 degrees.  In a large bowl mix all ingredients together for three minutes on high. Pour into greased bundt pan.  Bake 45-50 minutes or until a toothpick comes out clean.  Let sit in pan ten minutes, then invert onto a cooling rack.  Cool completely.

8 ounces cream cheese, softened
2 cups powdered sugar
1 Tablespoon lemon zest
1 teaspoon lemon juice

Combine all ingredients.  Beat on high until creamy.  Pipe the frosting over the cake.

I promise this cake is going to change your life, like it did mine.  Well, maybe not entirely, but it sure has filled the last few months with sunshine right there in my mouth.  

Because I have made this cake so much lately, I figured that after this post this cake was going to a friend's house.  Well, My Mr. B asked if it was for him.  After all, I just made it last week - but he asked me to please keep it because it smelled so good and he really likes it.
