Cherry Cream Puff

Would you like a simple, delicious dessert everyone comments on?  Here you go - it has a cool, refreshing taste, too.

Ingredients for the Crust:
1 cup water
1/2 cup butter
1 cup flour
4 eggs

Cream filling:
1 cup milk
3/4 cup sour cream
1 small box of INSTANT vanilla pudding/pie filling
1/4 tsp almond extract
1 - 21 oz cherry pie filling

Heat oven to 400 degrees.

Heat water and butter to boiling.  Stir in flour, vigorously, until it forms a ball (about 1 minute).  
Remove from heat and add eggs.  Beat until smooth (about 2 minutes on low).

Drop dough by tablespoons on to a greased cookie sheet - in an 8" ring or heart shape.  Smooth the top of dough to connect.  Bake until golden, 50-60 minutes.  Cool.

Carefully slice off the top and scoop out excess egg mixture.

Mix filling and spoon over the bottom crust.  Add cherries on the inside - save some for the top.  Replace the top crust and arrange extra cherries on top.  Maybe you can do it a little more carefully than I did. 

Sift powdered sugar on top.  Keep refrigerated.
