Melt In Your Mouth Potatoes

These really do melt in your mouth.  And they are making my mouth water just thinking about them.

Peal and cube 8-10 potatoes.  Boil potatoes and drain water.


Melt 1/4 cup margarine.  Cook 1/4 cup chopped onion in melted margarine.



Add to butter and onions:  1 can cream of chicken soup, 1/2 pint sour cream and 1/2 cup grated cheese.


Mix the margarine/sour cream mixture with the potatoes.


Place in a casserole dish.  Top with a handful of crushed Cornflakes and 1 Tablespoon of butter.  And sometimes I add a little more cheese.


Wanted to take a picture of the finished product - but I didn't get there before everyone started dishing up their plates.  I'm telling you it is really that good!
